Cracked wheat, some bottle age complexity and a fair bit of class. Fine bones and bubble, a savoury style with good acidity (i.e. not harsh) and a salted cracker finish that's dry and lemony. Certainly (good) Champagne-like in its delivery and level of sophistication.
