Made in the traditional Italian style, fruit was sourced predominantly from the Del Rios vineyard in Victoria and gently pressed using airbag presses and the resulting free run juice was then chilled to 4 degrees and filtered before fermentation. Post fermentation the wine was cold stabilised and lightly fined before being cold filtered ready for bottling.
